andy buck | this is definitely tasty, but it's just one small component of a dish. What you are looking at is tomato sauce with a veal stock base, turned into a gel with agar agar. It was then set in the fridge in spherical molds. We then cut them into quarters and surrounded them with ground pork and panko to create meatballs and fried them in rendered beef fat. When you bite into them the sauce is a delicious liquid on the center of the meatball. They are for 'meatball madness' at this year's NYC Wine + Food festival. They had better be as good on the real day as our testing day, since the competition is mario batali, michael white, harold dieterle, rocco dispirito, andrew carmellini, etc, etc. |
