josh haroldson farmers market bounty. sweet peppers, hot chilies, sweet carrots and black and french breakfast radishes.
josh haroldson i need a good quick pickling recipe for the radishes and carrots. any ideas?
andy buck absolutely. The ratio i use (in fact i used it today) is: 2:1:1/16th (sugar, vinegar, salt. it's an approximation like everything else- add more of something if you think you should). Put the sugar, vinegar (i usually use white wine vinegar), salt, and veggies in the pan and bring up to a boil. Reduce to a simmer and let it go for 5 minutes or so, then jar. It's also nice to toss some garlic, black pepper corns, chili flakes, etc in at the beginning for a little more complex flavor

andy buck anytime. the thinner you slice your veg the faster the process will work. you'll know they are truly pickled when they sink, but usually they are pretty tasty right away
