andy buck | absolutely. The ratio i use (in fact i used it today) is: 2:1:1/16th (sugar, vinegar, salt. it's an approximation like everything else- add more of something if you think you should). Put the sugar, vinegar (i usually use white wine vinegar), salt, and veggies in the pan and bring up to a boil. Reduce to a simmer and let it go for 5 minutes or so, then jar. It's also nice to toss some garlic, black pepper corns, chili flakes, etc in at the beginning for a little more complex flavor |

andy buck | anytime. the thinner you slice your veg the faster the process will work. you'll know they are truly pickled when they sink, but usually they are pretty tasty right away |
