andy buck this is a dish i've been evolving for a little while. chinese black rice, soy/chipotle marinated skirt steak, shiitake mushrooms, scallion, leeks
andy buck marinated is the wrong word. while the steak is resting after a blast on both sides on cast iron the soy/chipotle sauce is poured over, and it absorbs the flavors while it cools.
