sam wong Do the properties of canning/picking salt lend itself to other uses?
andy buck canning/pickling salt is just fine ground kosher salt- chemically they are the same. pickling salt has the advantage of dissolving quickly in liquids, where kosher salt takes a while. pickling salt is useful anytime you want small granules- like when seasoning popcorn. in recipes calling for pickling salt you can sub out kosher salt if you wish, but use 1.5x the called for amounts to account for the difference in volume.
